Panamanian Geisha naturally stands out for its extreme elegance, silky body, and intense floral notes (jasmine, bergamot).
Washed Profile: Respects its purest and cleanest profile; accentuates notes of jasmine, orange blossom, and lemon.
Natural Profile: Maximizes sweetness, bringing notes of mango, papaya, peach, and ripe tropical nuances.
Anaerobic Profile: Intensifies mandarin-like citric acidity and adds a very fine spicy background.
PACAMARA GRAND CRU
Pacamara (hybrid of Pacas and Maragogipe) features large beans, a dense and creamy body, and a foundational herbal-fruity complexity.
Natural Profile: Maximizes its creamy body, bringing dense notes of fleshy fruits (plum, black cherry), caramel, and dark cocoa.
Washed Profile: Highlights notes of fresh grass, lime, grapefruit, and milk chocolate.
Anaerobic Profile: Develops notes of raisins, sweet spices (cinnamon), and a very pronounced winey character.
CATURRA HAUTE ALTITUDE
Compact-grain Bourbon mutation known for offering bright acidity, a medium body, and a traditionally balanced profile.
Anaerobic Profile: Introduces lactic notes (strawberry yogurt), soft caramel, and a residual vanilla or molasses-like sweetness.
Natural Profile: Modifies its body making it rounder and juicier, adding notes of red fruits (blackberries, cherries) and fudge.
Washed Profile: Cleans the cup and marks classic notes of green apple, moderate citrus, and panela.

Above 1,800 meters of altitude on the slopes of Volcán Barú, Atlantic and Pacific microclimates collide. This creates the legendary Bajareque—a cold, fine mist that slows cherry maturation, intensifying complex aromatics and fruit sugars.
To protect both the integrity of the terroir and the anonymity of the producers, Barú Terroir operates strictly under a Blind Allocation Protocol. Master roasters evaluate the pure cup profile via coded samples before the producer's identity and direct-trade sourcing are unlocked.

Panamanian Geisha coffee, cultivated on these extreme slopes, possesses a sensory profile without equivalent in the specialty coffee world. This botanical miracle is the direct result of its terroir. The volcanic soil, laden with millenary minerals and nutrient-rich ash, nourishes the root system with rare chemical complexity.
The catalytic element remains the phenomenon of the Bajareque. This misty, freezing breeze born from the thermal collision between the Pacific Ocean and the Caribbean Sea plunges the coffee trees into a continuous cool microclimate. Acting as a natural regulator, the Bajareque drastically slows cherry maturation, forcing the plant to massively concentrate its sugars and develop the ethereal floral notes (jasmine, bergamot, orange blossom) that define the ultimate tasting experience.
